I made Cendol Pudding today for iftar's dessert ( break fast ) . Cendol is one of must-have dessert during Ramadan in my family . Cendol made from rice flour and other ingredients that are formed by filters, then mixed with palm sugar and coconut milk . This recipe has already been used by many bloggers. It's a good recipe that moderately sweet & rich .
CENDOL PUDDING
First Layer
- 10 gram agar-agar powder
- 500 ml water
- 180 gram caster sugar
- 300 ml thick coconut milk
- 500 gram cendol
- 1 pandan leave (knotted)
- A pinch of salt
- 10 gram agar-agar powder
- 500 ml water
- 200 gram palm sugar (Gula melaka)
- 3 pandan leaves (knotted)
- A pinch of salt
- Combine water, agar-agar powder, pandan leave and sugar in a pot and boil it .
- Add salt and keep stirring until mixture boils slightly .
- Remove pandan leave and add in cendol . Stir .
- Pour into a pan (10x10 inch) or jelly mould . Leave aside until jelly is set.
- Once set, gently scratch top of layer with fork
- Combine palm sugar, pandan leave and part of water in a pan. Heat up until sugar dissolves. Strain the sugar solution.
- Combine sugar solution, agar-agar powder and the remaining water in a pot . Heat up until mixture boils.
- Add salt and mix until well blended . Remove pandan leave .
- Remove from heat and pour mixture gently onto the first layer.
- Set aside to cool. Chill before serving.
- Wet mould with water before pouring jelly mixture so that it's easy to remove jelly when it's set.
- You may also line pan with plastic if using square, rectangle or round pan.
- While waiting for the first layer to set, prepare for second layer.
